Conquered Bread is a micro-bakery home kitchen side-hustle and bread share located in Downtown Concord, NH. All of our baking contains high extraction flour that is freshly milled in-house each week from regionally sourced grains. We think the bread is killer and are happy to share it with you.

Elemental Breads: Hand made and slow risen from minimal ingredients.

The Flour

All of our breads include a mix of refined bread flour and fresh high extraction flour, stone-milled in-house each week. We mill using regionally sourced modern and heirloom wheat, retaining as much of the grain as possible for optimal flavor, nutrition, and performance.


The Yeast

We naturally leaven our breads with a wild yeast sourdough culture that we maintain with wheat middlings reserved from the milling process. We typically use this culture early in the fermentation cycle to minimize acid transfer to our breads, creating flavor profiles that are satisfying and complex but not overly sour.


The Bread

Conquered Breads go through a long, slow fermentation and are baked up to a full 24 hours after the initial mix. They are baked nightly at high temperatures with a healthy amount of steam, resulting in deep brown exterior crusts that contrast with their soft interior crumb.

We are committed to sustainability at all levels of our bread baking. The bread is made with as many locally and regionally sourced ingredients as possible and we specifically avoid purchasing ingredients that come packaged in single-use plastic. Our bread always comes to you in recyclable paper bags.
