Our special order this week is back by popular demand. Of all the bread we have made in the past year, this is one of the biggest swings we took and it got some of the most ardent spontaneous praise from customers. Flattery gets you everywhere here at Conquered Bread.
Okayu is a Japanese rice porridge that we make with organic short grain brown rice and season with organic red miso which brings complexity and a lovely saltiness and malt flavor to a dough that includes 40% fresh-milled whole grain Warthog wheat. Despite the heft of the ingredients, the okayu keeps everything light and tender inside the crust. This bread is best paired with savory foods like cheese, lightly scrambled eggs, or just some really good butter. Enjoy toasted if you really wanna ride the umami.
